The last few days of the summer 2020... my colourful plate.
Ingredients:
Fresh tomatoes
Broccoli florets
Cabbage
Golden beetroot
Sweet potatoes
Jackfruits
Golden beetroot are roosted with some thyms in the oven for a good 45 mins until tender (170 degree).
Tomatoes, broccoli and cabbage are lightly cooked in coconut oil in a pan the broccoli must stay crunchy.
Sweet potatoes cooked in the oven for 30 mins (170 degree).
Jackfruits are marinated in sweet chili coconut sauce and cooked in pan at the last minutes with garlic.
Simple to do, a bit long in terms of cooking but totally worth it!.
