Ingredients:
One zucchini
1/2 cup of tamari sauce
1 TBSP grated fresh ginger
1 TBSP grated garlic
1 TSP Optional spice such as chili
1 cup of rice
1 TSP spring onion
Black sesame seeds or white doesn’t matter.
4 TBSP +/_ coconut yogurt
1 TBSP Chia seed
The day before: In dish pour the tamari, garlic, ginger, spices. Put the sliced zucchini. Let overnight in the fridge.
Use the full coconut yogurt put chia seed inside mix everything together. Let it set for the night too.
Take the marinated veggie out.
Cook to rice as indicated (usually 1:4).
Once the rice is cooked let it slowly cool down, lay out the dish.
Mixe the rice with sesame seed. Add the marinated zucchini. Scoop one coconut yogurt and lay it on top. Sprinkle with some spring onion.
Adding some mango either cut or in chutney is a blast!!
